100gramPecorino Romano cheese or fresh Parmesan cheese, grated
20gramparsley, chopped
50gramwheat flour
1tsppepper
4tbspolive oil
some salt optional
Instructions
Great zucchini coarsely. Scrub the lemon and grate the yellow peel. Grate the cheese and chop the parsley. Mix the zucchini with the zest, egg, wheat flour, cheese, parsley and pepper. Little bit of salt is optional.
Make 12 mounts of the zucchini batter with 2 tbsp and flat them a little bit with a spatula. Heat 2 tbsp of olive oil in the frying pan and bake the first batch in 6 minutes on each side till there brown and cooked. Then make the second batch.
You can combine this with baked fish or as a vegetarian main course or lunch dish with lettuce.
