gloves of garlic (smashed)

carrots (cut into 2 inch pieces)

celery stalks (cut into 1 inch pieces)

leek (cut into 2 inch pieces)

beef broth

balsamic vinegar

dijon mustard

brown sugar

dried thyme

crushed bouillon
salt and pepper to taste
Instructions
Season roast with salt and pepper and sear on all sides until browned. Transfer roast to slow cooker.
Add all remaining ingredients and cook on low 8 hours.
You can add 2 tbsp of flour for a thicker gravy. (Optional)
