Bring in a pan the lentils, bay leaves, 1 clove garlic and water to a boil and let it simmer for 20 minutes. Drain and take out the clove of garlic and bay leaves.
In the mean time peel the yams and cut into ½ inch cubes. Cut the bell peppers into cubes.
Heat the oil and fry the yams with the cajun spices at medium/high for 10 minutes. Toss regularly. After 8 minutes add the rest of the garlic (minced). Add the bell peppers and the diced tomatoes and heat for 5 minutes. Add the lentils and heat for another 2 - 3 minutes. Sprinkle the celery leaves on top.
Serve immediately or serve with any meat you like.
