In dry frying pan roast the dry coconut light brown in approx. 2 minutes.
Heat oil and fry onion, red bell pepper and ginger slowly in 5 minutes. Add garlic, curry powder, pimento or all-spice, paprika powder and coriander for 2 minutes. Then pour in the coconut milk and let simmer for 10 minutes.
Mix in the cod and let it simmer/boil till cod is cooked, approx. 5 to 8 minutes. Bring to taste with the lemon, salt and pepper. Serve with fresh coriander and the roasted coconut on top.
For the people who prefer more spicy add your favorite hot sauce.Very tasty with rice or noodles.
