Brush with oil, salt and pepper to taste and your favorite bbq sauce. Grill covered over indirect medium heat for 1½ to 2½ hours for rare to medium.
To grill over indirect heat on gas grill, set foil drip pan under centre rack of 3 burner bbq. Heat remaining burners to temperature indicated.
Using a thermometer to test internal temperature of beef roast: Rare - 125 to 130 F, Medium-Rare - 131 to 140 F, Medium -141 to 150 F, Medium-Well - 151 to 155 F and Well Done - 156 to 160 F
Excellent with potatoes or rice, summer salad or the corn on the cob that I posted.
