Slice the avocado in half and remove the pit. Peel the fruit by placing the cut down and remove the skin with a knife or your fingers, starting at the small end. Slice the avocado and sprinkle with lemon.
Spread the bread generously with the hummus. Divide the avocado slices over the 4 pieces of bread.
You can cut the mint in strips or use the whole small leaves and sprinkle all over the avocado.
