Omelet with Avocado

  • frying pan

Ingredients
  

  • 2 eggs
  • olive oil
  • couple mushrooms (sliced) the kind you like!
  • 5 cherry tomatoes or 1 tomato (sliced)
  • ½ avocado (sliced)
  • salt and pepper to taste

Instructions
 

  • Beat the eggs. Fry the mushrooms put aside and add the eggs. You can either fry the tomatoes or add them later on. Sprinkle the avocado with some lemon.
  • Make sure your plate is warm. Slide the omelet on the plate add tomato and avocado and fold. Salt and pepper to taste.
  • Serve with toast!
