Parmesan Chicken

Ingredients
  

  • ¼ cup panko or breadcrumbs
  • cup parmesan (finely grated)
  • 2 green onions (finely chopped)
  • 4 tbsp butter (melted)
  • salt and pepper to taste
  • 4 chicken breasts filets
  • finely grated zest and juice of ½ lemon
  • 2 tbsp fresh parsley (chopped)

Instructions
 

  • Preheat oven to 375 F / 190 C
  • In a small bowl mix together the breadcrumbs, parmesan, green onions, lemon zest, butter (melted), salt and pepper.
  • Divide the mixture between the chicken breasts. Press the mixture on top to form a coat. Transfer the chicken breasts to a greased baking sheet or oven dish and bake for 20 – 25 minutes.
  • Remove the chicken and keep warm. Optional: Ad the lemon juice and parsley to the buttery juices in the dish and mix well. Pour the juices over the chicken and serve immediately.
    If not using the lemon juice. Sprinkle the parsley over the baked chicken.
