Rice Salad with Black Beans

Ingredients
  

  • 1 cup white rice (or your own choice)
  • ¼ red onion (small)
  • 3 tbsp red wine vinegar
  • 2 green onions
  • 1 bell pepper (any color)
  • 2 tbsp parsley (chopped)
  • cup black beans
  • 4 tbsp extra virgin oil
  • salt and pepper to taste

Instructions
 

  • Boil the rice. Let cool for 30 minutes. In the mean time cut onion in half rings and mix with the red wine vinegar. Let stand for 30 minutes. Stir occasionally.
  • Drain and rinse the black beans. Cut green onions in small rings. The bell pepper in cubes. I took a half yellow and a half orange for color. Chop the parsley.
  • Mix the rice, beans, onion and the vinegar, green onions, bell pepper, oil and parsley. Salt and pepper to taste.
  • You can make it a day ahead! An excellent dish for a summer buffet, BBQ or a pick nick in the park!
