Lentils with Yams and Cajun Spices

Ingredients
  

  • 3 cloves of garlic
  • cup green lentils (dry)
  • 3 bay leaves
  • 400 gram yams (diced)
  • 1 tbsp olive oil
  • 1 tbsp cajun spices (seasoning)
  • ¼ red onion (chopped)
  • 1 cup mushrooms (sliced)
  • 3 bell peppers (red, yellow, green)
  • 2 cups diced tomatoes
  • 2 tbsp celery leaves (chopped)

Instructions
 

  • Bring in a pan the lentils, bay leaves, 1 clove garlic and water to a boil and let it simmer for 20 minutes. Drain and take out the clove of garlic and bay leaves.
  • In the mean time peel the yams and cut into ½ inch cubes. Cut the bell peppers into cubes.
  • Heat the oil and fry the yams with the cajun spices at medium/high for 10 minutes. Toss regularly. After 8 minutes add the rest of the garlic (minced). Add the bell peppers and the diced tomatoes and heat for 5 minutes. Add the lentils and heat for another 2 – 3 minutes. Sprinkle the celery leaves on top.
  • Serve immediately or serve with any meat you like.
