Chow Mein with Sweet and Sour Sauce

Ingredients
  

  • 250 gram Chinees style chow mein
  • 1 small can of lychee
  • 3 tbsp sunflower oil
  • 2 leeks (chopped)
  • 2 carrots (chopped)
  • 1 bell pepper (chopped) any colour
  • some shanghai bok choy (chopped)
  • some mushrooms
  • 1 small onion (chopped)
  • 1 clove of garlic (crushed)
  • 150 gram beansprouts
  • 200 ml sweet and sour stir fry sauce
  • 250 gram chicken or pork (pieces)

Instructions
 

  • Boil water in large pot. Add the noodles and cook uncovered for 2-3 minutes. Drain.
  • Drain the lychees
  • In the mean time chopped all the vegetables and meat.
  • Heat 3 tbsp of sunflower oil and start frying the onion then add the chicken or pork and fry for 3 minutes. Add all the other vegetables and garlic and fry for another couple minutes. Add the sauce and lychees and heat trough. Stir occasionally.
  • In a frying pan heat 2 tbsp of sunflower oil, stir in the noodles and add 1½ tbsp of soya sauce. Mix well and stir fry for 2 minutes. Add the vegetable mixture from the other frying pan and mix everything together. Done!
