Pulled Pork with Fennel Seed Garlic and Lemon
Equipment
- Oven Dish, aluminum foil
Ingredients
- 1 lemon
- 2 lb pork loin
- 4 tbsp olive oil
- 5 cloves garlic (crushed)
- 1 tbsp fennel seeds
- ½ tsp chili flakes
- pinch of salt
- 1 cup bbq sauce
Instructions
- Preheat oven to 225 F / 110 C.
- Scrub the lemon clean and grate of the yellow zest. Mix together the salt, olive oil, garlic, fennel seeds, chili flakes and lemon zest. Marinade the pork loin with the mixture. Place the pork loin oven dish and squeeze the lemon over the meat. Cover with aluminum foil. Place in the oven and let it simmer for at least 4:30 hours. After this time see if you can pull the meat with 2 forks.
- When done, mix the pulled pork with bbq sauce and the juices and broil for couple minutes on high.
- Eat with a bun, wrap or lettuce wrap.
