Quinoa Salad with Tuna
Equipment

Ingredients
- 1½ cup quinoa
- 300 gram green beans
- 1 cucumber (chopped)
- 4 tomatoes (chopped)
- 2 cans tuna in oil
- fresh parsley (finely chopped)
- pepper to taste
Instructions
- Cook the quinoa according to the instructions on the package. Cook the green beans for 6 minutes.
- Drain the quinoa and the green beans separate and rinse both in a colander under cold water. Drain well.
- Mix together the green beans, cucumber, tomatoes and the quinoa and carefully mix in the tuna and parsley. Bring to a taste with pepper.
- Serve in a bowl or divide over 4 plates.
- You can add some extra vegetables like fried mushrooms, zucchini or red onion.
