Yams from the BBQ

Ingredients
  

  • 4 Yams
  • 1 tbsp olive oil
  • 4 tbsp sundried tomatoes
  • 1 green onion (chopped)
  • fresh parsley
  • ½ cup sour cream

Instructions
 

  • Preheat BBQ. Pierce the yams all around with a knife or fork. Grease the potato with oil. Wrap in thick foil. If you have a 3 burner bbq turn down to low and turn off the middle burner. Put the yams in the middle and turn them around occasionally. It depends on the size of the yams, are they really big leave them on for 1 hour. Otherwise 45 minutes is enough.
  • Cut the sundried tomatoes in strips. Cut the green onions in small rings and chop the parsley. Mix together the sour cream, sundried tomatoes, green onions and parsley.
  • When potato is done cut lengthwise but not all the way through and fill with the sour cream mixture.
  • The sour cream mixture you can also use on a regular potato!
    Make it complete with any meat, vegetable or salad!
