Yams with Broccoli (Spicy)
Equipment
- Baking sheet, Oven, Parchment paper, Frying pan
Ingredients
- 500 gram Yams
- 4 tbsp sunflower oil
- 1 red pepper
- 5 green onions
- 2 clove of garlic
- 500 gram broccoli
- 3 tbsp sweet red chili sauce
Instructions
- Preheat oven to 400 F / 200 C. Peel yams and cut them in wedges lengthwise. Spread them out on a with parchment paper baking sheet. Mix half of the oil through the wedges and sprinkle with salt. (optional) Bake for 35 to 45 minutes.
- Deseed the red pepper and cut into small rings. Cut the green onions into oblique rings and cut the garlic into thin slices. Divide the broccoli into florets. Boil for 2 to 4 minutes after 30 minutes oven time.
- Heat the rest of the oil and fry the green onions for 1 minute. Add the red pepper and garlic. After 1 minute add the broccoli and warm for another minute.
- Yams should be ready. Scoop the yams onto a large bowl and mix in the broccoli mixture. Sprinkle with the sweet red chili sauce. Serve immediately!
- Serve with grilled salmon or chicken.
