Lentils with Yams and Cajun Spices
Equipment
- frying pan
Ingredients
- 3 cloves of garlic
- 1½ cup green lentils (dry)
- 3 bay leaves
- 400 gram yams (diced)
- 1 tbsp olive oil
- 1 tbsp cajun spices (seasoning)
- ¼ red onion (chopped)
- 1 cup mushrooms (sliced)
- 3 bell peppers (red, yellow, green)
- 2 cups diced tomatoes
- 2 tbsp celery leaves (chopped)
Instructions
- Bring in a pan the lentils, bay leaves, 1 clove garlic and water to a boil and let it simmer for 20 minutes. Drain and take out the clove of garlic and bay leaves.
- In the mean time peel the yams and cut into ½ inch cubes. Cut the bell peppers into cubes.
- Heat the oil and fry the yams with the cajun spices at medium/high for 10 minutes. Toss regularly. After 8 minutes add the rest of the garlic (minced). Add the bell peppers and the diced tomatoes and heat for 5 minutes. Add the lentils and heat for another 2 – 3 minutes. Sprinkle the celery leaves on top.
- Serve immediately or serve with any meat you like.
