Savory Cake with Egg
Equipment
- bowl, cake tin
Ingredients
- 8 eggs
- ½ cup milk
- ½ cup sunflower oil
- 7/8 cup self-raising flour (175 gram)
- ¾ cup tex-mex grated cheese
- 5 sun dried tomatoes (cut in strips)
- 2 tbsp parsley (chopped)
Instructions
- Preheat oven to 350 F / 175 C.
- Cook 5 eggs for 8 minutes. Peel the eggs.
- In a bowl, whisk the 3 eggs, mix in the milk and oil. Sift the flour above it and spatula through the egg mixture. Add cheese, dried tomatoes and parsley!
- Grease the cake tin with a little bit of oil. Put halve the cake batter in the tin. Place the boiled eggs (lengthwise) on top and cover the eggs with the rest of the batter. Bake (middle rack) for about 50-55 minutes, until cake is golden and a toothpick inserted in the center comes out clean.

This is a lovely cake to serve for Easter breakfast! It has a light savoury flavour that would pair well with ham or bacon. It is not a sweet bread, which is why it is so good for any meal! The eggs surprise in the centre makes this outstanding!
