Salmon with Fennel

Fennel has the cool crunch of celery with a strong note of licorice or anise when you take a bite!
Salmon with fennel
Equipment
- oven dish
Ingredients
- 1 fennel bulb
- 1 orange
- 650 gram salmon
- 1 tbsp olive oil
- 1 tbsp fresh parsley (finely chopped)
- 1 tbsp fresh basil (chopped) or dry if not available
- salt and pepper to taste
Instructions
- Preheat oven to 400 F / 200 C.
- Cut off the root end and stalks of the fennel. Halve the bulb and make ¼" slices. Cut the orange in ¼" slices.
- Divide the fennel over the whole length of the dish and arrange the orange slices on top. Place the salmon on top and sprinkle with the oil, salt and pepper. Roast for 30 to 40 minutes. Make sure your salmon is fully cooked. When done sprinkle the parsley/basil on top.
- The fennel will stay crunchy. If you prefer softer, fry your fennel first in some oil or butter for 5 to 7 minutes. It will loose some of the licorice taste.
