Cauliflower Nuggets

Ingredients
  

  • 5 tbsp mayonnaise
  • 5 tbsp greek yogurt
  • 1 cauliflower
  • ⅔ cup panko
  • 2 tsp garlic powder
  • 2 tsp paprika powder
  • 2 tsp Italian seasoning
  • 2 tbsp sweet chili sauce

Instructions
 

  • Preheat oven to 400 F / 200 C.
  • Place cauliflowers florets in a bowl and mix with 3 tbsp mayonnaise and 3 tbsp greek yogurt.
  • In another bowl combine the panko, garlic powder, paprika powder and italian seasoning and mix well. Add the cauliflower mixture and stir.
  • Place the cauliflower on a lined baking sheet (parchment paper). Bake for 30 minutes turning halfway.
  • Prepare the sauce: Mix the leftover mayonnaise and greek yogurt with the sweet chili sauce.
    I added 1 extra tbsp of chili sauce to make it more spicy!
    Delicious served with the sauce.
