Potato Tortilla with Bacon

Equipment

  • spring form 8 or 9 inch, frying pan

Ingredients
  

  • 50 gram bacon (cut in stripes)
  • 2 clove of garlic (sliced)
  • 1 onion (cut into half rings)
  • 2 tbsp olive oil
  • 4 roasted red bell peppers (jar)
  • 5 eggs (large)
  • 2 cups hash browns
  • salt and pepper to taste
  • 1 tbsp fresh parsley (chopped)

Instructions
 

  • Preheat oven to 350 F / 175 C.
  • Heat the olive oil in the frying pan and fry the bacon strips for 1 minute. Add the sliced onion and garlic and fry for another 2 minutes.
  • In the mean time cut the roasted bell peppers in strips. Beat the eggs and sprinkle with salt and pepper. Add the roasted bell peppers, hash browns and the onion mixture.
  • Pour the mixture into a greased spring form pan and bake for 25 minutes. When done remove the side and slide gently onto a plate. Sprinkle with the parsley!
  • Serve warm or lukewarm. Great for breakfast, brunches!
