Potato Tortilla with Bacon
Equipment
- spring form 8 or 9 inch, frying pan
Ingredients
- 50 gram bacon (cut in stripes)
- 2 clove of garlic (sliced)
- 1 onion (cut into half rings)
- 2 tbsp olive oil
- 4 roasted red bell peppers (jar)
- 5 eggs (large)
- 2 cups hash browns
- salt and pepper to taste
- 1 tbsp fresh parsley (chopped)
Instructions
- Preheat oven to 350 F / 175 C.
- Heat the olive oil in the frying pan and fry the bacon strips for 1 minute. Add the sliced onion and garlic and fry for another 2 minutes.
- In the mean time cut the roasted bell peppers in strips. Beat the eggs and sprinkle with salt and pepper. Add the roasted bell peppers, hash browns and the onion mixture.
- Pour the mixture into a greased spring form pan and bake for 25 minutes. When done remove the side and slide gently onto a plate. Sprinkle with the parsley!
- Serve warm or lukewarm. Great for breakfast, brunches!
