Red Lentil Soup
Equipment
- hand blender
Ingredients
- 100 gram red lentils
- 1 onion (finely chopped)
- 1 150/200 gram carrot (finely chopped)
- 1 small leek (chopped)
- 2 tsp curry powder
- 1 tsp coriander powder
- 1 tsp cumin powder
- 1 ltr. chicken or vegetable broth
- 1½ tbsp oil
Instructions
- Fry onion, carrot, leek, curry-, coriander-, cumin powder for a couple minutes. Add the broth and lentils and let it simmer for 35 minutes.
- Puree the soup with the hand blender. Serve with a slice of lemon or fresh coriander.
- (Don't soak red lentils)
