Cauliflower Quiche

Ingredients
- 2 deep pie shells
- 1 small/medium cauliflower
- 125 gram blue cheese
- 4 eggs
- 250 ml whipping cream
- salt and pepper to taste
Instructions
- Preheat oven to 350 F / 180 C.
- Cut the cauliflower into florets and boil for 5 minutes. Drain, let it cool and divide over the pie shells.
- Crumble the cheese over the cauliflower. Beat the eggs and mix with the whipping cream, add salt and pepper to taste. Poor over the cauliflower and bake in the oven for 45 minutes golden brown.
- Serve with a green salad.
