Stuffed Bell Peppers
Equipment
- Baking sheet, Oven, Parchment paper
Ingredients
- 2 red onions
- 2 clove of garlic (chopped)
- 4 sprigs of oregano or use dry oregano
- 3 tbsp sunflower oil
- ½ tbsp curry powder
- 1 can white beans in tomato sauce
- 4 red bell peppers
- 300 gram spinach
- 200 gram feta
- salt and pepper to taste
Instructions
- Preheat oven at 350 F / 180 C.Cut the onions in half rings. Chop the garlic and oregano leaves.
- Heat the oil and fry the onions, garlic, curry powder, pepper, salt to taste on low heat for 5 minutes. Stir occasionally. Add the beans and oregano (or use dry oregano) and warm for another 5 minutes.
- Half the bell pepper and remove seeds. Line the baking sheet with parchment paper.
- Add the spinach to the mixture and let it shrink slightly while stirring. Put bell peppers on baking sheet and divide the mixture and sprinkle feta cheese on each one! Put in the oven for 20 a 25 minutes.
