Stuffed Potato

Equipment

  • aluminum foil, baking sheet or pan

Ingredients
  

  • 4 big potatoes
  • 4 green onions (chopped)
  • 4 clove of garlic (chopped)
  • 3 tbsp olive oil
  • 2 tbsp fresh parsley (finely chopped)
  • 2 tbsp fresh basil (finely chopped)
  • 2 tbsp pine nuts
  • salt and pepper to taste

Instructions
 

  • Preheat oven 400 F / 200 C.
  • Brush/clean potatoes and cut length wise. Chop the green onion and garlic. Mix in a bowl the olive oil, green onions, garlic, parsley, basil, pine nuts and salt, pepper to taste.
    Divide over the potato halves and squeeze the other half on top. Wrap the potatoes in aluminum foil and cook for 1 hour in the oven.
  • Very tasty with grilled meat!
