Ingredients
  

  • 800 gram cod fillet (cut into strips)
  • 2 tbsp dry grated coconut
  • 3 tbsp oil
  • 1 onion (cut into rings)
  • 1 red bell pepper (cut into rings)
  • 1 tbsp fresh ginger (grated)
  • 1 clove of garlic (minced)
  • 3 tsp curry powder
  • ½ tsp pimento or all-spice
  • ½ tsp mild paprika powder
  • ½ tsp coriander
  • 3 dl coconut milk
  • 2 tbsp lemon juice
  • 3 tbsp fresh coriander (chopped)
  • salt and pepper to taste

Instructions
 

  • In dry frying pan roast the dry coconut light brown in approx. 2 minutes.
  • Heat oil and fry onion, red bell pepper and ginger slowly in 5 minutes. Add garlic, curry powder, pimento or all-spice, paprika powder and coriander for 2 minutes. Then pour in the coconut milk and let simmer for 10 minutes.
  • Mix in the cod and let it simmer/boil till cod is cooked, approx. 5 to 8 minutes. Bring to taste with the lemon, salt and pepper. Serve with fresh coriander and the roasted coconut on top.
  • For the people who prefer more spicy add your favorite hot sauce.
    Very tasty with rice or noodles.
