Fish Curry
Equipment
- frying pan
Ingredients
- 800 gram cod fillet (cut into strips)
- 2 tbsp dry grated coconut
- 3 tbsp oil
- 1 onion (cut into rings)
- 1 red bell pepper (cut into rings)
- 1 tbsp fresh ginger (grated)
- 1 clove of garlic (minced)
- 3 tsp curry powder
- ½ tsp pimento or all-spice
- ½ tsp mild paprika powder
- ½ tsp coriander
- 3 dl coconut milk
- 2 tbsp lemon juice
- 3 tbsp fresh coriander (chopped)
- salt and pepper to taste
Instructions
- In dry frying pan roast the dry coconut light brown in approx. 2 minutes.
- Heat oil and fry onion, red bell pepper and ginger slowly in 5 minutes. Add garlic, curry powder, pimento or all-spice, paprika powder and coriander for 2 minutes. Then pour in the coconut milk and let simmer for 10 minutes.
- Mix in the cod and let it simmer/boil till cod is cooked, approx. 5 to 8 minutes. Bring to taste with the lemon, salt and pepper. Serve with fresh coriander and the roasted coconut on top.
- For the people who prefer more spicy add your favorite hot sauce.Very tasty with rice or noodles.
