Traybake with Roasted Bell Pepper and Chicken Thighs

Ingredients
  

  • 3 red bell peppers
  • 500 gram tomatoes
  • 2 red onion
  • 2 clove of garlic (sliced)
  • 1 lemon
  • 2 tbsp olive oil
  • 400 gram chicken thighs
  • 200 gram kalamata olives
  • salt and pepper to taste

Instructions
 

  • Preheat oven at 400 F / 200 C.
    Cut bell peppers in quarters. Remove seeds and cut each part in two pieces. Cut tomatoes and onions in eight parts and the garlic in thin slices.
  • Brush the lemon and grade the yellow from the lemon. Cut the lemon and squeeze. Mix the lemon juice with the zest and oil. Halve the chicken thighs and brush with the lemon-oil mixture.
  • Divide the bell pepper, onions, garlic and chicken on a with parchment paper lined baking sheet. Add salt and pepper to taste and sprinkle with the olives.
    Bake in the oven for 35 minutes!
