Ingredients
  

  • 1 tbsp olive oil
  • 4 pounds blade roast
  • 2 onions
  • 4 gloves of garlic (smashed)
  • 4 large carrots (cut into 2 inch pieces)
  • 2 celery stalks (cut into 1 inch pieces)
  • 1 leek (cut into 2 inch pieces)
  • 1 cup beef broth
  • ΒΌ cup balsamic vinegar
  • 2 tbsp dijon mustard
  • 1 tbsp brown sugar
  • 1 tsp dried thyme
  • 2 tsp crushed bouillon
  • salt and pepper to taste

Instructions
 

  • Season roast with salt and pepper and sear on all sides until browned. Transfer roast to slow cooker.
  • Add all remaining ingredients and cook on low 8 hours.
  • You can add 2 tbsp of flour for a thicker gravy. (Optional)
